Bubblegum Funfetti Lamingtons

Bubblegum Funfetti Lamingtons Can one small cake square be any more fun?  Bubblegum funfetti lamingtons are a whole heap of fun and child like excitement all in a small morsel of cake. Huge cake squares swirled with coloured batter dipped in bubblegum flavoured glaze then taken over the top by coating it in sprinkles! Who can say no to big cake cake square covered in sprinkles? No one human that’s for sure, or people who don’t like sprinkles. But I’ve never come across someone who doesn’t like sprinkles. Bubblegum-Funfetti-Lamingtons Traditionally Lamingtons are Australian vanilla cake squares dipped in chocolate and coated in coconut. I love both the traditional ones and the bubblegum funfetti lamingtons. The bubblegum funfetti lamingtons are made similarly to the traditional ones. Vanilla cake batter in divided and tinted before before swirled into a cake pan. After being baked ad cooled the cake is cut into squares before being dipped in a delicious bubblegum flavoured icing glaze. The squares are then rolled in colourful sprinkles. Bubblegum Funfetti Lamingtons Bubblegum funfetti lamingtons are easy to make, but they are slightly messy and require a smidge of multi tasking. To flavour the glaze I use LorAnn oils which smell AMAZING and taste good too! Bubblegum Funfetti Lamingtons
There are so many ways you can play with these. You can do different colour cake batters or one bright colour and have a single colour sprinkle on the outside. Wouldn’t these be great for a party with a cool colour scheme. Man I need to make some more funfetti lamingtons and have a play around.

Bubblegum Funfetti Lamingtons

Fun loving twist on traditional Lamingtons with these Bubblegum Funfetti Lamingtons. Vanilla cake squares dipped in bubblegum icing and rolled in sprinkles.
For the cake...
  • 250g (1⅛ cup) soft butter
  • 175g (1 cup) caster sugar
  • 1 tsp vanilla
  • 275g (2¼ cup) plain flour
  • 2 1/12 tsp baking powder
  • 1 tsp salt
  • 3 eggs
  • 150ml (1/2 cup) milk
  • Pink and purple gel food colouring
For the coating...
For the cake...
  1. Preheat the oven to 180C and line a 6 inch square tin with greaseproof paper.
  2. Cream the butter, sugar and vanilla for about 3 minutes till pale and fluffy. Add the dry ingredients and add the egg and milk.
  3. Mix until just incorporated.
  4. Remove half of the mixture and divide between two bowls. About a ¼ each. Add the food colouring, pink in one bowl and purple in the other and mix together.
  5. Spoon half the vanilla mixture into the cake tin. Dollop and swirl in the tinted batter then top with the remaining batter.
  6. Bake for 25-30mins. Allow to cool in the tin slightly before removing and cooling on a cooling rack.
  7. Once cooled, trim the tops and sides and cut into 9 squares
For the coating...
  1. Melt the butter. Add to icing sugar and whisk. Add the bubble gum flavouring and gradually add the milk, till the mixture lightly coats the back of the spoon.
  2. Pour the sprinkles in a shallow bowl or plate.
  3. Dip the cake all over in the icing, shaking off any excess icing with one hand. Place the cake in the sprinkles and shake ensuring the cakes are coated in the sprinkles. Set aside so the icing firms
Oh So Sweet Baker's Notes
- It is better to make the cake and cut the squares the day before to settle the crumbs, to reduce the amount of crumbs in the icing.
